Black tea is fully oxidized, removing all green color from the original leaves. This is sometimes (incorrectly) referred to as “fermenting.” (If you want real fermented tea, see our Pu-erh teas).
After oxidation, the tea is generally stronger and higher in caffeine than white, green, or oolong tea. It also has a longer shelf life.
Masala chai is typically made from black tea (although others can be used) mixed with Indian spices, milk, and sweetener. It is traditionally simmered rather than steeped, but you can do it either way. Some of the common spices are cardamom, cinnamon, cloves, ginger, and pepper, but everyone makes their chai differently. We like to sweeten our chai with pure Montana honey!
